PhD Overview
My research proposal revolves around the idea of extraction of a specific anthocyanin, the cyanidin-3-glycoside (C3G) from purple corn, its application on a food matrix, and investigation of the antihyperlipidemia effect of C3G. The objectives include determining the effect of C3G fortified in the developed product on the potential reduction of cholesterol levels. The effect of C3G will be determined using various in vitro set-up using HepG2 cells and in vivo. Lipid profiles will be determined after the experiments to test the effectiveness of the developed product against hyperlipidemia.
